If, when opening a PDF document created by your scanner, it asks for Japanese fonts, it is because "Japanese and English" was set for the PDF language.

Solution

If, when opening a PDF document created by your scanner, it asks for Japanese fonts, it is because "Japanese and English" was set for the PDF language.

To correct this, before scanning a document to PDF, click the Detailed Settings, and choose "English" instead of the default "Japanese and English" for the OCR language setting.

This will only need to be done once.
